  4. Add the beef broth, bay leaf, and thyme to the pot. Bring to a boil, then reduce the heat and simmer for 1-2 hours, until the meat is tender.
  5. Add the carrots and potatoes to the pot and continue to simmer for an additional 30-40 minutes, until the vegetables are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley if desired.
